i’m absolutely unsure of why i call this spinach side dish italian spinach, probably because of the crushed red pepper flakes, but whatever the reason, who cares?! it’s delicious, easy and is the perfect side dish in every way.
- 4 cups raw spinach
- 4 tbsp chopped garlic
- 2 tsp crushed red pepper flakes
- 4-6 tbsp olive oil
heat the olive oil in the pan until warm, add in garlic, crushed red pepper flakes, salt and pepper and continue to heat until the garlic just starts to sizzle.
dump raw spinach on top of everything in the pan and wait a moment for it to start to wilt. once it gets wilty, stir it around, until totally wilted and the garlic is cooked through.
transfer out to a bowl, leaving remaining spinach liquor / garlic mixture in the pan.1
